I use this in some of the protein powders I use that do not contain xanthan gum, which leaves them very "icey" and not smooth at all when blended with lots of ice. Adding a teaspoon or two to each batch really "fluffs" the protein shake up to where it gets like soft serve ice cream, velvety smooth.

BTW, if you want to know the best protein powder for making these smooth shakes (without needing additional xanthan gum), it is Giant Sports protein powder (vanilla shake best flavor by far).

That's really all I use this for, but it does thicken, no doubt.

I was looking for a way to thicken my protein shakes to make them more palatable and found this to be a great alternative. I mixed the shake ingredients together with about 1/2 teaspoon of the Xanthan Gum and refrigerated it overnight. The next morning I dumped it in my blender with some frozen fruit and it was PERFECT! You can drink it slowly and it maintains the thickness even when not ice cold. When I would use crushed ice it was a race to suck it down fast enough before the consistency got too runny and the flavor was of course always watered down. This is a great alternative and the little bag will last me forever!

This is just enough to fit into a 9 ounce Gerber baby bottle (sounds goofy- but they are great storage containers with a narrower top that still allows a spoon for measuring- just get some of the Gerber apple juice in bottles to have lids that fit perfectly). I made my first GF muffins today, and used this; the muffins were great ! I like this brand in general, and wasn't let down :)

This xanthan gum works well in my gluten free recipes. I recommend storing in an airtight container in the refrigerator for the best shelf life.
Also, if you happen to have a spill, use a dry paper towel or hand vac to get up as much as you can before getting it wet, because once moisture is added, it can get sticky and messy.

I've used this in dozens of gluten free baking recipes, and as long as I measure carefully and don't add too much, this really gives them the body and structure they need.

I have been trying to experiment with gluten-free cooking, and this ingredient, which is common in those recipes, is impossible to find locally. While I have yet to master yeast breads (need more modification and special ingredients for these to work), simply adding a bit of this to my old recipe for cookies and quick breads and replacing the flour with a gluten-free variety has resulted in very good results using all-purpose gluten-free flour, sorghum flour, and rice flour (tried recipes with each, not a combination of flours).

Wish it came with more detailed instructions as a very, very little goes a long way. There is an equivalency chart on the back; initially I paid this little attention. Do not ignore this. You will rarely use more than 1/2 tsp. It dies take a minute or two for thickener to do its thing (I think I was too impatient). Product is great, does what it says, thickens and holds particles evenly throughout. No specific flavor or graininess to get in the way of your culinary creations.
