
If you follow me on Instagram or get my personal email newsletter, you know I was sick all last week with Flu A. Today is my first day to be up and about at my normal pace. I wanted to do a little meal prep for the week but didn’t feel like I had the energy to do a 2-3 hour session. So I did a mini one-hour prep session instead and Jesse helped me!

I’ve been wanting to try making homemade Little Bites. I found a recipe online and tweaked it some and was so happy with how it turned out. And the little kids are loving them. They call them baby muffins. 🙂

While I made the muffins and spaghetti casserole, Jesse made a huge pile of PB&J for the freezer. He and Silas have been loving having these. We’ll see how long this batch lasts. The last one only lasted a few days! 🙂




Mini Meal Prep Session:
3 bags of browned ground beef (I made three pounds of ground beef and divided it into 4 parts and used one part of it for the spaghetti casserole. We’ll use the other bags for meals this week. I’m planning to do beef and veggies and rice one night and then Silas will use the rest for lunches.)
Spaghetti casserole — this will likely last us for two dinners since it’s a bag pan! We’ll serve it with green beans and homemade rolls. (I mixed the browned ground beef with pasta sauce and then layered that with spaghetti noodles and a mixture of cottage cheese/eggs/mozz cheese.)
Little Bites — recipe coming later this week, hopefully!
14 Freezer PB&Js — Silas and Jesse love having these for snacks and quick lunches. They are healthier and much less expensive than uncrustables!

Thank you so much for this, even when you’re not yet 100%! I really appreciate all the recipes too.
Just knowing that you can plan small & not need to spend 3-4 hours is helpful. I can start with a little at a time & not have to get a whole weeks worth right out of the gates! Extremely helpful for my “ALL OR NOTHING” mind. Thank you for the mind shift!

How long can the beef be stored in the fridge? Do you use special bags?
For the pb&j, do you just do the same thawing as uncrustables?
I just use regular bags. We usually use it within 4-5 days.
Yes, you can thaw just like uncrustables!
I noticed Jesse picked the PBJs to make sure the ratio of pb to j was equitable!😂
