This White Cheddar and Squash Casserole is like a macaroni and cheese casserole with squash instead of noodles. This tastes SO good! It will make squash haters change their minds! Squash, onion, butter, salt, pepper, flour, milk, white cheddar cheese, and breadcrumbs. The best part is that this casserole can be made ahead of time and baked later for entertaining. Perfect for a Memorial Day cookout, dinner party, or a hectic weeknight!

How to Make Easy Squash Casserole

This casserole is super easy to make with only a few simple ingredients. In a large skillet, melt butter over medium-high heat. Add sliced squash and chopped onion. Saute until tender. Season with salt and pepper to taste. Remove vegetables from the skillet and drain any excess moisture. 

In the same skillet, add two tablespoons butter and melt. Add flour and whisk to form a paste. Slowly whisk in milk. Bring to a boil. Cook over medium heat until the sauce starts to thicken. Remove the skillet from the heat and stir in shredded white cheddar cheese. Add the squash mixture to the sauce and stir. Spoon into a baking dish. Sprinkle breadcrumbs over the top of the casserole and bake until bubbly.

Ingredients:

  • 4 Tbsp butter, divided
  • 1 medium onion, chopped
  • 3 lb yellow squash, sliced
  • 2 tsp salt, divided
  • ¾ tsp pepper
  • 2 Tbsp all-purpose flour
  • cups milk
  • 2 cups shredded white cheddar cheese
  • 2 Tbsp Italian breadcrumbs

Instructions:

  • Preheat oven to 400ºF. Lightly spray an 11×7-inch dish with cooking spray. Set aside.
  • In a large skillet over medium-high heat, melt 2 Tbsp butter. Add onion and cook for 5 minutes, or until tender. Add squash, 1½ tsp salt, and pepper. Cover and cook, stirring occasionally, 15 minutes, or until squash is tender. Drain well.
  • Melt the remaining 2 Tbsp butter in a saucepan over medium-high heat. Whisk in flour until smooth. Slowly whisk in milk. Bring to a boil; reduce heat and simmer for 2 minutes. Remove from heat and stir in cheese and remaining ½ tsp salt.
  • Gently stir together the squash mixture and cheese sauce. Pour into prepared pan. Sprinkle with breadcrumbs.
  • Bake for 20 minutes, or until bubbly. Let stand 10 minutes before serving.

  1. So tired of the same vegetables, I decided to give this a try and serve it along side some grilled chicken. This dish makes a few dishes, but totally worth it!! So cheesy and delicious. My kids loved it too which is a huge bonus. I wasn't sure how they would feel about squash. But then again, you could cover just about anything in a cheese sauce and it'd be awesome. Love, love, LOVE this recipe!
