The casserole looks wonderful and hope to make it up next week but as for the refried beans; don't think in my lifetime that I will be able to get hubby to even try em. I always say;... 'Don't say EW until you chew.'

I have never used anything but regular rice, so I don't know. I do know the ratio of ingredients would change with minute rice. Sorry but I can't guarantee what the results of this dish would be by changing the recipe.

I don't use rice much so forgive the maybe dumb question. Do you boil the rice first or do you put "dry" rice directly in the skillet?

I typically am not a fan of Spanish Rice...but this is not your grandma's Spanish rice! I made this for a pot luck lunch as a vegetarian dish...I substituted vegetable broth for the chicken broth, and omitted the meat, and everyone LOVED it-including me. I am making it tonight as listed above, and I can't wait! soooo yummy!
