I wanted to share my new recipe with you: Ā Greek MinuteĀ® Rice Medley Salad. Although I made this recipe with MinuteĀ® Multi-Grain Medley (which is no longer available), you can make it with any Minute Rice. You are going to love creating recipes with all of the Minute Rice products because they are ready in just 10 minutes!
I served myĀ Greek Minute Multi-Grain Medley Salad for lunch and my family loved it. It’s a filling meal or side dish because with the chick peas and feta cheese this salad has protein too. I’m excited to discover the new Multi-Grain Medley because it’s made from 100% whole grain, is a good source of fiber and it cooks in only 10 minutes. It’s a great option for those who are gluten-free and I love how colorful it is! It’s also a great recipe to make for your tailgating party!
Greek Minute Medley Salad Recipe
This salad is a quick and easy recipe packed with flavor! You can serve it as a side dish or as a main dish because it’s got protein in it. My family loved eating it with toasted pita bread!
- 1 box (use 2 of 4 bags) of Minute Multi-Grain Medley (cooked & chilled overnight)
- 1 can (15 oz.) of chick peas or garbanzo beans (drained)
- 1 cup sliced Greek Kalamata Olives (drained)
- ½ purple onion (finely diced)
- 2 cups small grape tomatoes (halved)
- 6 oz. curmbled feta cheese
- ½ cup fresh dill (finely diced, stems removed)
- ¼ cup olive oil
- Cook the Minute Multi-Grain Medley the night before so it can chill in the refrigerator overnight.
- Combine all ingredients, adding in the olive oil last before tossing it together to blend ingredients.
- Serve chilled with warm pita bread (you can rub it with olive oil then toast it in the oven at 350 degrees for 5 minutes each side)

š„¬Caprese Salad on Gluten Free Crackers Appetizer Recipe
Summertime brings entertaining friends and family and foods on the lighter side! I made Caprese Salad on gluten free crackers that I bought at Target. The fresh taste is truly a treat on a hot summer day, and it’s a bit of a surprise to guests to see salad served on crackers!
Caprese salad is simple to make using only a few ingredients. I loved using it as a topping for my gluten free crackers. You will need to reduce balsamic vinegar on the stove top which takes a little time, but the taste results are so worth it! See my recipe below so you can make it for your family and friends!
Caprese Salad on Gluten Free Crackers
Ingredients:
Gluten Free Crackers
freshĀ mozzarellaĀ ball
roma tomatoes
fresh basil
balsamic vinegar
salt & pepper
Directions:
1. Ā Ā In a small skillet over medium heat,Ā warm the balsamic vinegar until it boils. Reduce heat so it simmers and condenses into a thick syrup.
2. Ā Slice freshĀ mozzarellaĀ and place on Vanās Simply DeliciousĀ®Ā Gluten Free Crackers
3.Ā Slice roma tomatoes and place on top ofĀ mozzarella
4. Ā Select the smallest leaves of fresh basil to place on top ofĀ tomato
5.Ā Ā Drizzle a little reduced balsamic vinegar over the top
6. Ā Lightly sprinkle with salt & pepper
Now you’ve got a fresh and unique appetizer to serve guests for your summer get togethers!Ā This is a sponsored conversation written by me on behalf of VanāsĀ® Foods. The opinions and text are all mine.Ā Please read myĀ Disclosure Policy.
